Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
The Cuvée RDJ Numéro 2 by Cédric Bouchard is a rare champagne from the Roses de Jeanne estate, located in Celles-sur-Ource in the Champagne region. This wine comes from a distinctive plot of less than one hectare, where Pinot Noir?–?the only grape variety in this cuvée?–?thrives in limestone and clay-limestone soils, typical of the Aube terroir. The biodynamically cultivated vines are hand-harvested at peak ripeness. The vinification is carried out naturally, with fermentation in stainless steel vats without the addition of yeasts or sulphur. The wine is aged on fine lees for an extended period, allowing the juice to develop great complexity and a silky texture. The secondary fermentation is performed without dosage, preserving the purity of the fruit and the expression of the terroir.
On the nose, this nectar offers delicate aromas of red fruit and white flowers, complemented by notes of toasted bread and minerality. On the palate, it is distinguished by its precision, freshness, and rare elegance, with a long, saline finish.
