This Blanc de Noirs is a refined and unique product of the Champagne terroir, hailing from the exceptional but little-known lieu-dit of Les Chardons in Breux-Jouy. In Breux, the clay-limestone soils give the wine a distinctive structure, beautiful tension, and a mineral signature that perfectly balances the natural richness of Pinot Noir. The grapes are harvested by hand at optimal ripeness before being gently pressed to extract only the purest juices. Alcoholic fermentation takes place in temperature-controlled stainless-steel vats, followed by partial malolactic fermentation to preserve the freshness. The wine is then aged on lats for 36 months, which gives it additional complexity and remarkable finesse of bubbles.
Throughout the tasting, the glass shows a pale colour with very fine bubbles. The nose reveals aromas of crisp red berries, toast, white pepper, and a hint of flint. The attack on the palate is lively and tense, delicately leading to a long, mouthwatering and gentle, spicy finish.
