While the estate’s historical roots lie in Vergisson, in Pouilly-Fuissé, Éric Forest is expanding his reach to the Côte Chalonnaise, north of the Mâconnais. Recognised as a regional appellation in 1990, it brings together five villages and produces white wines that are increasingly prized for their frankness and finesse. The grapes for this wine come from a clay-limestone terroir resting on white marl and Jurassic limestone, offering this Chardonnay a natural tension and purity of expression. The harvest is carried out by hand, the grapes are gently pressed and low intervention wine-making methods are used. Fermentation takes place in demi-muids and Burgundy barrels with indigenous yeasts, followed by ageing on fine lees for around 12 months without stirring to preserve freshness and structure.
The wine has a golden colour that is both clear and bright with silver hues. The nose evokes acacia blossom, candied lemon, warm stone, fresh butter, and hazelnut. The attack is taut and lively on the palate before rounding out with a chalky, salty texture.
