The Aux Bousselots climat lies in the northern area of Nuits-Saint-Georges. The vines thrive on soils composed of sand and gravel mixed with silt, a combination that produces wines with pure fruit, a supple texture, a structuring acidity and a chiselled profile rather than an opulent one. Manual harvests are followed by traditional, low-intervention vinification. In the winery, the fruit undergoes gentle maceration to preserve the finesse of the variety. The wine is then aged in casks for 16 months before bottling without fining and with light filtration.
The wine displays a stunning ruby-red hue. The bouquet reveals peony and red berry notes, lifted by fine spice and subtle earthy tones. On the palate, a silky attack opens onto pure fruit and a fine, structuring acidity, unfolding into a saline, gently spiced finish.
