This precise Pinot Noir is the result of long ageing and comes from old vines rooted in the renowned Chenôve terroir. The clay-limestone soils impart mineral tension and firm tannic structure, while the age of the vines brings complexity and aromatic concentration. The grapes are hand-picked at peak ripeness. Whole clusters undergo spontaneous fermentation with native yeasts, during a long 28-day maceration. Ageing takes place in oak casks for around fifteen months with minimal sulphur added before bottling.
In the glass, the wine reveals a light ruby hue, which is particularly clear. The nose reveals notes of red berries, fresh herbs and light floral touches. On the palate, a delicate, fresh attack opens onto pure fruit and structured tannins, leading into a delightfully fruit-driven, persistent, mineral finish.
