In Chassey Le Camp, in Burgundy, Naima and David Didon have found their little corner of paradise where they've been growing vines biodynamically since 2017. If neither of them come from traditional winemaking families, they each developed a passion for oenology on their own. Naima began by working in administration, and david started his career in environmental protection. Combining their strengths, they chose a rigorous and demanding path, in the vineyard and the winery alike, to make wines with notable purity. Whilst their domain is small, it's safe to bet that the years to come will be in their favour...A domain to watch!
Les Péteurs is a bright, authentic expression of Aligoté, the iconic grape of the Côte Chalonnaise. Grown biodynamically on the eponymous parcel in Chassey-le-Camp, the vines rest on mineral-rich clay-limestone soils that bring tension, freshness and aromatic precision. Planted by rigorous selection of the finest vines in 1947, the vineyard benefits from meticulous, respectful work that follows the natural rhythm of the plant and preserves local biodiversity. Vinification focuses on fruit purity: hand-harvesting is followed by slow, gentle pressing. Spontaneous fermentation takes place with native yeasts. The wine is then aged for seven months in fibre tanks before bottling without fining or filtration.
In the glass, the wine reveals a pale yellow hue with silvery glints. The bouquet reveals white flowers and yellow fruit. The palate offers vibrant freshness and a saline texture, leading into a clean, persistent finish.
