Mazis-Chambertin Grand Cru Joseph Drouhin 1988
The wine
The Pinot noir that makes up this grand cru is grown in a terroir neighbouring another Côte de Nuits icon: Chambertin Clos de Bèze. These vines enjoy the influence of soils rich in clay, chalk, and pebbles. The domain limits its yields to 38 hectolitres per hectare to let the vines draw their nutrients fully and capture the essence of the terroir. To craft this cuvée, the domain macerated the grapes for two to three weeks. Wild yeasts bring about fermentation and there is a gentle extraction for the Pinot noir to express its typical, delicate features. Finally, the wine was matured for 14 to 18 months in oak casks (20% new wood). This wine can be enjoyed just as much young as it can after 20 years of ageing. It reveals a deep, ruby colour, from which exude powerful notes of red fruit, black fruit, and liquorice. Over time, it will also develop aromas of leather and musk. Persistent and structured, its tannins are silky and elegant. This cuvée will pair nicely with red meat, brie, and vegetable soups.
