Manual harvests preserve their integrity of the clusters which are carefully sorted. Vinification is performed in open vats, sometimes including whole bunches, to ensure gentle, balanced extraction of the tannins. The wine is aged in French oak casks, with 20–30% new wood, for 12 to 18 months, allowing the juice to develop subtle nuances of vanilla and spice.
