The Muscadet-Sèvre-et-Maine appellation, located south-east of Nantes, is the most renowned in the Pays Nantais, in the Loire Valley. It takes its name from the two rivers that run through the vineyard: the Sèvre Nantaise and the Maine. The Melon de Bourgogne vines, averaging 60 years of age, are planted on gabbro soils. This distinctive terroir gives the wine its intense mineral backbone, broad structure and a depth rarely found in dry white wines. Manual harvests preserve the integrity of the berries. After around 12 hours of settling, the must is clarified before fermentation, which lasts approximately 21 days with native yeasts. The wine is then aged for an extended 33 months on lees in underground cement vats.
The pale yellow hue is lifted by golden glints. The subtle, complex nose combines aromas of lemon and ripe pear with saline notes. Broad and structured on the palate, the wine is driven by incisive minerality.

Domaine le Fay d’Homme, located in Monnières, is run by the Caillé family. Today, it’s represented by the fifth generation of winemakers which has been at the head since 1986. Ten years after taking over the reins, he decided to grow his vines and make his wine according to organic and biodynamic principles (and holds Ecocert and Demeter certificates). This meant that the domain produced the first organic Muscadets from Nantes.

The wine is made with as little intervention as possible. Fermentation is started by natural yeasts that are present in the grapes before the resulting wine is aged on its lees in different containers for a long time. The 25 hectares of vines are planted with different varieties: Melon de Bourgogne, Folle Blanche, Gamay, Abouriou, Côt and Cabernet.
