The Trentino-Alto Adige region, known in Italian as Alto Adige, lies in northern Italy and is renowned for its remarkable geological and climatic diversity. Manincor, based in Caldaro in the province of Bolzano, is one of the region’s leading estates, combining a deep respect for nature with traditional winemaking. The vines benefit from a complex geological setting, with limestone and clay-limestone soils that promote good water retention and even ripening. The manual harvests take place once the grapes have reached optimum ripeness, preserving their freshness and quality. In the winery, the must undergoes temperature-controlled fermentation in stainless steel vats. The wine is then aged on fine lees for several months in stainless steel, preserving its vibrant acidity while adding complexity without any influence from oak.
In the glass, the wine presents a bright, clear, pale yellow hue. The nose is wonderfully fresh, revealing aromas of white flowers, white peach and lemon zest, complemented by a subtle mineral note. Lively and refreshing on the palate, it is driven by impressive tension.

Manincor est un domaine historique de l’Alto Adige qui existe depuis plus de 400 ans. L’expertise du domaine dans la vinification est cependant récente et date de 1996 lorsqu’il crée sa propre cave. C’est un domaine familial détenu par la famille Goëss-Enzenberg qui exploite une cinquantaine d’hectares. Le domaine a tout de suite voué une attention particulière aux sols et à une viticulture saine et durable en biodynamie. La propriété est d’ailleurs entourée en plus des vignes, de prairies, vergers et bois qui créent un véritable écosystème. Grâce à sa rigueur, le domaine est devenu un incontournable de la région, les vins s’inspirent parfois des assemblages bordelais : merlot, cabernet sauvignon ou encore sauvignon blanc sont donc plantés sur le domaine, mais également d’autres cépages bien connus comme le chardonnay, pinot noir, viognier et des cépages autochtones comme le schiava, moscato giallo et lagrein.
