The wine
Experience the secrets of a Grand Cru and the pleasures of fine dining. In the château’s dining room, enjoy a menu specially designed to pair with our wines by our Chef Maxime Pommier, in the company of a member of the Château Haut-Bailly team. This experience includes a tour of the estate, a champagne aperitif cocktail, a four-course menu and three wines from the estate.
Located in the heart of the Graves, in Pessac-Léognan, Château Haut-Bailly presents a cuvée blended from Cabernet Sauvignon, Merlot and Petit Verdot. The vines that give rise to this wine are tended by hand with the utmost care and respect for the land.
Ageing lasts 18 months in French oak casks, 50% to 65% of which are renewed each year. Human intervention is kept to a minimum to allow the wine to faithfully express the true character of its terroir.
The dominance of Cabernet Sauvignon produces racy wines of great ageing potential, also appreciated for their suppleness and balance. The wine shows an intense hue with purplish glints. The nose offers a complex array of ripe black fruit and sweet spice notes supported by well-judged oak. On the palate, it reveals impressive fullness leading to a smooth, persistent finish.
