This wine pays tribute to Manzoni Bianco, a rare Italian grape variety born from a cross between Pinot Blanc and Riesling, and named after the professor who developed it in the 1930s. Having studied with him, Elisabetta’s father planted a small number of vines on the family estate, laying the foundations for this distinctive cuvée.
The grape variety finds its voice in the clay- and limestone-rich hills above Trento, where the fruit benefits from a long growing season and typically ripens towards the end of September.
Drawn to amphora vinification and the expressive clarity it brings, the Foradori family applies this approach to their Manzoni Bianco, using cement vats. The wine is then aged for 12 months in acacia barrels, following a deliberately low-intervention philosophy. From harvest to bottling, only minimal sulphur is added. As the Foradori family like to say, “the wine must be alive.”
In the glass, it is both lively and elegant, offering notes of white fruit, blossom and honey, lifted by a fine minerality on the finish. Serve alongside salt cod fritters, where its energy will shine!


About the Producer Elisabetta Foradori

Elisabetta Foradori is part of a whole movement of Italian winemakers who have sought to re-establish a relationship with the earth through their eco-friendly viticulture. When her father passed away in 1984, Elisabetta Foradori (at the age of just 20) took up the 26 hectares that make up the family domain, which was created in 1901 and is found at the foot of the Dolomites in northern Italy. She has returned the regional Teroldego grape to its former glory. Uninspired by methods that seek quantity over quality, she converted to biodynamics in 2002 (Demeter certification in 2009) with the aim of bringing a certain purity to her wines. In recent years, she has made it her project to revive another varietal, the Nosiola grape. Always striving for a strong identity in her wines, she even vinifies certain cuvées in amphora and terracotta containers. Today, this domain is undoubtedly the most renowned in the Trentino region – the wine made here is truly exceptional.
