Created as a homage to the current estate owner’s father, this pure Assyrtiko is the quintessence of what the island of Santorini can offer as regards wine.
More infoStella, the current director of the Hatzidakis estate and the daughter of Haridimos, made this cuvée in honour of a father whose wines held up a mirror to the very soul and terroir of Santorini. This cuvée is a single-variety Assyrtiko, a grape emblematic of the island. The vines are ungrafted and non-irrigated, and trained in baskets, according to a traditional method, protecting them from the strong winds that sweep the Mediterranean. Vinification is conducted using native yeasts. During tasting, the wine reveals elegant notes of citrus and a long, fresh mouth with iodised touches. Unsurprisingly, this wine is a perfect accompaniment to oily fish such as salmon or trout.
About the Producer Hatzidakis
This organic domaine, founded by Haridimos Hatzidakis in 1996, is located on the island of Santorini. This unique terroir, with its volcanic soils whipped by strong winds, requires a special bush pruning technique reminiscent of bird’s nests. Particular attention is paid to the vines and this allows the various indigenous grape varieties grown on this domaine to express themselves fully.
