The wine
According to a well-established Provençal custom, vin cuit is offered to distinguished guests. The domain produces this vin cuit using techniques passed down through the centuries, concentrating the heated Grenache grape must. The slow, natural fermentation process is not followed by élevage. This is because the goal is to concentrate and preserve the fresh notes of fruit and chocolate. A truly great wine for enjoying at leisure.
About the Producer Les Bastides
Domaine Les Bastides, situated in the commune of Puy Sainte-Réparade just north of Aix-en-Provence, was acquired by a family of Provencal winemakers in 1967. Anne-Marie and Jean Salen produced their first vintage in 1976, having converted to organic viticulture in 1975. Today it is their daughter Carole who ably runs the domaine. Her winemaking eschews all artificial additions, ferments are spontaneous and their wines are matured slowly in large 50 hectolitre oak foudres.
