More infoDomaine le Conte des Floris, founded in 2000, spans around 7 hectares across the Languedoc communes of Pézenas, Caus and Gabian. Its terroir is rich with schist and clay, and the domain has organic and biodynamic certification since 2017. The Carbonifère cuvée is a blend of Syrah (75%) and 25% Grenache and Carignan. The grapes are harvested by hand using 12kg baskets before being pressed. The vinification that follows involves little intervention. No artificial yeasts or sulphur are added to the wine. There is a long vatting period of 6 weeks with intermittent stirring followed by 18 months of maturation in used oak barrels. Its nose gives off lovely notes of black fruits and gentle spices. On the palate it has a tautness that complements the fruity and mineral notes. It is faithful to its terroir. Decant this cuvée around an hour before serving it. It can be kept in the cellar for between 2 and 6 years before pairing with grilled duck, lamb or beef.
