The wine

This red Autrement et Encore, just like its white counterpart Au Hasard et Souvent from this domaine, is only produced in magnum format and its name is inscribed by hand on the bottle. The Cinsault grapes come from old vines growing on clay-limestone soils; they are harvested at peak ripeness and vinified using only indigenous yeasts without the addition of sulphites. The wine matures for between 8–10 months in old foudre barrels. Owing much of its pure character to the organic and biodynamic methods which produce it, this is a brilliantly fruity bottle with a soft, juicy mouthfeel.

About the Producer Les Terres Promises

Jean Christophe Comor started producing his certified organic wines in 2004, following a herculean effort cutting down trees, clearing stumps and preparing the land for replanting vines! One-time parisien and professor at the prestigious Sciences Po university, his winemaking whim has well and truly paid off; now producing wines with a unique character, elegance and complexity and in a style which improves with each vintage. One to watch.
