The Château du Cèdre is one of the most renowned domaines in the Cahors appellation. The adventure began in 1958, when Charles Verhaeghe started to plant vines on a mixed-crop holding. His two sons, Pascal and Jean-Marc Verhaeghe then took the reins, Pascal taking care of the vinification and Jean-Marc of the vines. The 27-hectare vineyard boasts a magnificent terroir and is planted with 90% Malbec. The wines from this domaine are of excellent quality and consistency. The two brothers also recently took over some vines in Roussillon.
Château Vari makes this lively, fruity and well-balanced sweet wine with organically-cultivated grapes affected by botrytis cinerea. The berries are harvested by hand in successive passes and the wine is fermented in 228-litre barriques and aged for between 9 and 14 months. Crafted for ageing, it will be ready to drink after 10 years in the cellar and makes a delightful pairing with regional specialities such as foie gras and the local cheeses.
