Located 4km from Gaillac, Domaine de la Ramaye has been producing wine since 1874. Its 6.5 hectares of vines are cultivated biodynamically amongst preserved forestland to create ecological balance and encourage biodiversity. Michel Issaly grows old, regional varietals such as Braucol, Duras, Mauzac and Prunelard. This cuvée is a dry white wine made from mature Mauzac vines that grow in a clay- and chalk-rich terroir. No additives are used during vinification, meaning no sulphites and no commercial yeast. The maturation takes 10 years and 6 months in former whisky barrels. The wine is not ‘ouillé’, it stays in contact with the oxygen around it, thus developing a sort of veil on the surface. On the palate we find characteristic nutty, citrus and toasted notes. This bottle can be kept for around fifty years!
