The Chardonnay used in this Mâcon-Fuissé draws its character from a terroir with a continental climate and chalky soil. Its producer, Christophe Cordier, is committed to crafting fine, white wines equal to those of the Côte de Beaune. He manages this with precise work on his soil that encourages microbial life and gets the roots to push deep. The vines are pruned to improve the maturity of the grapes; these are then harvested by hand before being taken to the winery in small cases. There, they are vinified by gravity in whole bunches. Wild yeasts set off fermentation and the wine is matured on lees in wooden containers; these confer texture and aromatic complexity. It is finally bottled without fining or filtering. In the glass, we find a light yellow wine that introduces a dense and generous palate, lifted by a fine acidity. It carried beautiful notes of white fruit, white flowers, and nuts like almond and hazelnut.
