Domaine Zeroine is located in the Jura. Rare and sought-after, this notably discreet estate has earned its reputation through the healthy cultivation of its grapes and its minimal, sometimes completely non-intervention, winemaking. A small gem waiting to be discovered!
The Savagnin vines, averaging some 30-year-old, flourish under organic and biodynamic viticultural methods, combined with a natural approach in both the vineyard and the winery. Once harvested, the grapes are carefully transported to the winery, where they macerate for 30 days in whole bunches, without any interference. The wine is then matured for two years in 500-litre oak casks. The wine is then bottled without fining or filtration, or added sulphur.
The striking golden colour is complemented by a complex, powerful bouquet of candied white fruit, fresh hazelnut and toasted almond. The palate reveals a superb balance of fine tension and lively acidity, leading to a remarkably long, fruity finish. This 100% Savagnin can be enjoyed while young or after several years of cellaring.
