Cœur de l’Histoire is undoubtedly one of Champagne Pierre Baillette’s finest cuvées. Here, Périne Chartogne Baillette has crafted a haute couture Blanc de Blancs Premier Cru from the estate’s oldest Chardonnay vines, which are around 50 years old. The vines are planted around the village of Trois-Puits, between the city of Reims and the famous Montagne de Reims. They thrive in the region’s characteristic chalk, limestone and clay soils. The gently sloping vineyards are shaped by numerous small valleys, creating a wide range of aspects from north to south, as well as east and west. The soils are farmed without herbicides or insecticides, with biodiversity at the heart of the estate’s approach.
In the winery, fermentation is triggered by native yeasts. The wine is vinified in vats for many months before being aged for almost a year in 350-litre oak barrels. It is bottled without filtration.
