More infoDilemme d’Achille is a unique wine that blurs the line between a pale red and a rosé de saignée, crafted entirely from Nielluciu. The vines thrive in a blend of clay and schist soils, which are a rare feature on the estate. Thomas Santamaria, the sixth generation of his family to oversee the estate, has managed the 13-hectare vineyard in the heart of the Patrimonio appellation since 2016. The vineyard lies in the northern part of the Corsica, west of Furiani some 25 kilometres southwest of Bastia. The estate’s Nielluciu plots are planted near the Padula Lake, where the influence of the water imparts a refined minerality to the wine. Dedicated to sustainable viticulture, Thomas adheres to certified organic practices (ECOCERT) and is increasingly incorporating biodynamic methods. Grapes are hand-harvested to ensure the utmost care and quality.
In the winery, Dilemme d’Achille undergoes a brief six-hour maceration in stainless steel tanks. The fermentation process is triggered by native yeasts. The wine is then aged for 12 months in stainless steel vats. Adorned with alternating labels featuring a tiger or a horse,
