Montre tes Yeux is a captivating single-varietal Cinsault. The vines thrive on a schist-dominant terroir, complemented by clay and limestone. Thomas Santamaria, the sixth generation of his family, has been cultivating the estate’s 13 hectares of vines in the Patrimonio appellation for nearly a decade. The vineyard lies in the northern part of Corsica, west of Furiani some 20 kilometres southwest of Bastia. With a commitment to organic farming certified by ECOCERT, Thomas respects the environment and has been experimenting with biodynamic methods in recent years. Here, grapes are meticulously harvested by hand.
In the winery, cuvée Montre tes Yeux undergoes a brief maceration using whole bunches. This wine is aged entirely in stainless steel vats. The fermentation process is triggered by native yeasts. The wine then matures for 12 months.
