Information
In the world of cognac, the famous angel’s share—a phenomena that affects all spirits during ageing—is as revered as it is feared, as this evaporation of alcohol helps concentrate and intensify the eaux de vie but also represents a significant loss in liquid. At Domaine Ferrand, the Angels’ selection correspond to the remaining liquid they were kind enough to leave us...
In the heart of humid cellars with thick walls and earthern floors lie hundred-year-old barrels containing precious liquid in the process of ageing. The Angels’ work brings us a supple, soft cognac where aromas of candied fruit dominate a complex palette of aromas. The intense, deep mahogany colour reveals a first nose that evokes jasmine tea, honeysuckle and walnut before moving into a vanilla woodiness, a little chocolate and a gentle nuance of curry. Allowed to breathe, it reveals notes of candied fruit, spices (saffron, ginger, nutmeg), cedar wood and a little honey.
