New Zealand is home to the iconic Burn Cottage Vineyard Property, a 24-hectare estate located at the foot of the Pisa Range in Central Otago. The Sauvage family acquired the property in 2002 and immediately adopted biodynamic practices, becoming the first and only estate in Central Otago to work according to these principles. Working alongside renowned consultant Ted Lemon, the family believes that exceptional wines are born from top-quality grapes. The vines are tended with meticulous care, and the wines are made using low-intervention methods that allow the fruit to fully express its aromas. Fermentation is started by natural yeasts and sulphur is used in minute quantities. Each bottle bears a label featuring an intertwined green snake and majestic lily. A symbol of the essential harmony between the people and the land in crafting exceptional wines.
The Burn Cottage Vineyard vines embody the perfect symbiosis of the Central Otago terroir and environmentally friendly viticultural practices. Thriving in a continental climate with harsh winters and warm summers, they benefit from strong daytime temperature variations, favouring optimum ripening and retaining all their freshness.
Designed to age for a decade, this wine offers surprisingly fine tannins and delicate notes of morello cherry and rose, harmoniously combined with a hint of spice. Each bunch of Pinot Noir is lovingly nurtured, to capture the vitality of the Sauvage Vineyard climat. The exceptionally delicate palate offers a complex range of flavours, revealing silky tannins and a lingering finish.
