Maxime Dubuet-Boillot chose the ‘Sur Roches’ parcel for its unique soil and exceptional minerality, creating a signature wine that perfectly expresses the Volnay terroir.

The winemaking process includes a 25-day maceration on skins, followed by ageing in oak casks for 1–3 years, to preserve the authenticity of the terroir without overloading the juice with woody notes.
On the nose, delicate aromas of Morello cherry, strawberry and peony rise from the glass, while the palate displays great tension and a pronounced minerality, with floral and fruity notes.

About the Producer Dubuet Boillot
Born among the vines of Volnay, his path initially led him to a career as a race car mechanic before steering back to his true calling. Well versed in motorsports, he also masters viticulture, earning a BTS in viticulture and oenology in Beaune. In 2016, he took over the six hectares of vines belonging to his maternal grandfather, Pierre Boillot. The estate spans prestigious appellations such as Volnay and Pommard, including the premier crus Les Pitures and En Largillière, as well as Coteaux Bourguignons and IGP Sainte-Marie-la-Blanche. Today, Maxime Dubuet-Boillot perpetuates his family’s winemaking legacy, crafting refined and elegant wines through meticulous vineyard work and minimal intervention in the cellar. Though not officially certified in biodynamics, his practices closely align with its principles.
