Rully Parent (Domaine) 2016

The wine

Domaine Parent’s Rully blanc is the fruit of eco-friendly growing since the property received organic Ecocert certification in 2013. Thus, the Chardonnay grapes are harvested by hand and totally destemmed before being placed in vats. Alcoholic fermentation is brought about by indigenous yeasts after a few days of cold maceration, a method for extracting flavour and other organoleptic qualities from the grapes. The grapes also benefit from the complex soils in which they are planted, rich as they are in red clay, chalk, and marl. In the glass, this cuvée has a pale, yellow colour and a floral, fruity, and mineral nose. We find notes of acacia, white peach, lemon, and flint. The palate balances fat with acidity for a silky, persistent result. We recommend serving it with delicate dishes or seafood.

About the Producer Domaine Parent

François Parent took over from his father, who bottled his first vintage in 1955. The domain went on to produce wines sold in the best Michelin-starred restaurants. François Parent also vinifies his wife's wines at A-F Gros. This cuvée was produced until 2006; when the parcel was sold.
