Chablis 1er Cru Vaillons Cuvée Guy Moreau Christian Moreau 2023

Der Wein

Planted in 1933 by Guy Moreau, Fabien Moreau’s grandfather, the Chardonnay vines found on this one hectare or so plot are the oldest belong to the domain. These old vines are rooted in a soil of clay-limestone marl with a high concentration of marine fossils, characteristics specific to Chablis. The organically cultivated grapes are hand-picked and carefully sorted, before reaching the pneumatic press. Once the juice has been cold settled, 60% is fermented with natural yeasts in stainless steel vats whilst the remainder is fermented in two to four wine barrels. Ageing continues on fine lees for nine months, followed by blending in vats for a further six months’ maturation.
This elegant and fragrant cuvée offers a bouquet of citrus fruits and white flowers as well as a generous and intense palate full of fresh minerality right until the finish. A wine of stature, perfect for serving with fish and seafood.

Das Weingut Christian Moreau

Fabien, ausgebildeter Önologe und Sohn des Winzers Christian Moreau, beschloss, das Familienweingut im Chablis weiterzuführen. Er besitzt Rebflächen in einigen Grands Crus mit Ton-Kalk-Böden aus dem Kimmeridgium, für welche die Region bekannt ist. Die Kritiker loben die Ausgewogenheit, die bei jedem einzelnen Weinjahrgang festzustellen ist.
Für Fabien Moreau ist es Ehrensache, seine Böden zu schonen, die seit sechs Generationen im Eigentum seiner Familie sind und die er seinen Kindern vererben wird. Daher bevorzugt er es, seine Böden zu pflügen und die Erträge so stark wie möglich zu begrenzen. Die Trauben werden selbstverständlich per Hand gelesen und dann im Weinkeller sortiert. Er verarbeitet nur die von bester Qualität.
Der Most wird zu einem feinen, ausgewogenen und präzisen Wein vinifiziert. Die Weine der Domaine reifen in der Regel in Barriques, wobei das Holz keinesfalls zu rau ist, daher sind sie immer sehr elegant. Sie entfalten eine besondere Leichtigkeit, ja ein fast samtiges Mundgefühl.
